A tree fell on our electric fence sometime this morning, and our pig got out. After spending over an hour trying to round up the pig, get the goats milked on a broken milk stand (the pig broke it), and chasing a rooster around, I still had a baby to nurse and three boys to get dressed, and breakfast to fix. We don't keep convenience foods in the house seeing as they are not convenient for our health. The idea of cooking breakfast did not appeal to me at all, but I have a family (army) to feed. I remembered that I still had a bag of pancakes in the freezer from when I made up a few batches before the last baby was born. I threw them in the oven and we all sat down to a nice hot breakfast fifteen minutes later.
As yummy as this meal looked in the picture, I was shocked when I took the lid off and saw a bunch of dry pasta, with very little sauce to go with them. The pasta was cooked to perfection, al dente, but the sauce was way too sparce, and there were very few chunks of sausage stew included in the meal. What sausage there was didn't taste like a high quality sausage. There were a few bell peppers and onions sprinkled throughout, but again, not nearly as many as I saw in the picture.
Since many restaurants are becoming more tolerant of their customer's dietary needs, more of them offer options for low carb dieters as well. Johnny's Pizza offers "doughless slices" (which are simply the sauce and toppings served in a small casserole dish) sausage casserole and cider my favorite "The Bronx Bomber" (meatballs, sausage, pepperoni, onions & green peppers baked in marinara sauce, topped with melted mozzarella). Just ask them to go light on the marinara sauce.
You can slow cook quick-cooking rice in about thirty minutes. Risotto rice is another kind of rice that cooks well in the slow cooker and quick-cooking risotto rice is the best variety. You can make a gorgeous, creamy risotto in your slow cooker in about an hour. Other crockpot recipes with rice include jambalaya and rice pudding. You can add cooked rice to any slow cooker colman's sausage casserole slow cooker in the final stages of cooking and it is especially good to bulk up a soup or stew dish.
I admit, I am not a morning person, combine that with a house full of people to get out the door (two of them being preschoolers) and the need to avoid rush hour traffic and long drop off lines at the school and a morning routine or schedule is not only helpful, but essential. Many people, though, don't like having cereal in the mornings. The good news is that there are plenty of other quick and healthy recipes that you can use for a great breakfast. If cold cereal isn't your thing, consider warm oatmeal or even cream of wheat for breakfast. Making your own oatmeal from scratch doesn't take much more time than using "instant", flavored oatmeal packets - and it is much cheaper and healthier. Add some berries and milk and you have a wonderfully tasty breakfast that doesn't take too much time to make.
It is not necessary or desirable to remove salt from your diet. Your body does require a certain amount of sodium to continue to function properly. By being aware of the sodium content in the ingredients you use and by gradually reducing the amount of salt you use in cooking you can reduce your sodium intake to a level that is less likely to affect your health. The over salting of food you see on the cooking shows is a sign that these chefs have become used to enhancing flavor with salt. This is not an especially creative cooking method. You can enhance the taste of food and reduce your salt intake with a bit of creativity. And remember; you can always add a bit of salt at the end of the cooking process if you think it is needed. Once added to the pot the salt cannot be removed.
